I love me some cakes! However, some times I stay away from the cakes as they are loaded with carbs. Now I am NOT saying carbs are bad but all things in moderation; right?!
These peach cakes are low carb and simply amazing! This is a single serving recipe and great for a quick yet rather fancy breakfast!
What you need for cakes:
2 egg whites
1 tbsp Greek yogurt
1 tbsp coconut flour
1 scoop protein powder (Vanilla)
1/4 tsp. baking powder
1/4 cup unsweetened coconut, cashew or almond milk (note you may need more or less depending on consistency)
1/4 cup chopped peaches
What you need for topping:
1 sliced peach
2 tbsp Greek yogurt
To Make: whip both egg whites until frothy. Add in yogurt, 1 tbsp coconut flour, protein powder, and baking powder. Add in the milk slowly to reach pancake consistency. Last add in chopped peached. Pour onto a warm pan sprayed with PAM – typically this makes 3 cakes.
Top each cake with a drop of yogurt and slice of peach.
Macros for all 3 cakes with topping: 274 cals/ 15g of carb- but 8g fiber/ 2g fat/ 34g protein!
