Coconut Cake balls
This may be your new favorite treat! There are so many variations you can create with a little imagination. I have played with this recipe for a while now and this is my all time favorite variation.
What you need:
1 scoop protein powder (I used vanilla for this recipe) – you can use chocolate or any flavor to create different variations.
1 Tbsp. coconut oil
6 Tbsp. water- give or take depending on the protein powder you use.
2 Tbsp. coconut flour
2-6 drops liquid stevia (depending on how sweet you want them and what flavor you want to make them) I used coconut for this recipe.
To make: In a small glass dish start off by melting your coconut oil until liquid form. Add in ½ cup protein powder and 2 Tbsp. coconut flour and start stirring. Add in stevia drops and water, 1 Tbsp. at a time. The dough should begin to form. You do not want them too runny- they should be firm like a cake ball.
Now here is where it gets fun you can add in various items: Lilly’s unsweetened chocolate chips, coconut flakes, chopped nuts, PB2, sprinkles. You can also use various flavors of protein powder too.
Makes 3 cake balls- serving size 3
