Okay before you judge me and think I have lost my mind– you have to try this! So this past week I was feeling burnt out of my salads. It seems I can go out to dinner almost anywhere and they can make me a salad that is EPIC and mine are all boring! Not sure if it’s because they make it for me and serve it to me or if its because they put the most unique things on my salad! So this week I made an EPIC salad and I wanted to share it with you all! I still need to think of a creative name for this salad- so if you have any ideas message me! My original thought was to call it the Egg-select Salad! (I know corny right).
What you need for the salad:
1 whole egg
3oz shredded chicken or beef (I used left over chicken- and kept it cold)
1 bag shredded lettuce
1/3 cup grilled onion
¼ cup salsa for dressing
Optional: tomatoes, 2 tbsp. corn, any green veggies, nuts, seeds, avocado, part skim cheese or feta
Simple place lettuce on large plate- top with shredded chicken and grilled onion. Meanwhile fry 1 whole egg and place on top of salad- add salsa and balsamic for dressing.
You could add avocado or chopped nuts or seeds for a healthy serving of fat.
